Beef Pasta- A Lean Meal

Tonight I'm sharing with you a recipe that my good friend Crystal Young posted on her blog a few weeks ago. It looked soo good I bookmarked it in hopes of making a healthy meal that I'd be able to freeze. While I haven't had a spare second to cook I'd still like to share. This recipe is actually courtesy of Texas Beef Council. By the way I love when people share recipes on their blogs I'm always looking for new meals to try. Feel free to use any of my family recipes I've posted, sharing is good!

Fresh Tomato, Beef an Bow Tie Pasta
Serves 4.

Ingredients
• 1 pound lean ground beef
• 3 cloves garlic, crushed
• 2 cups fresh tomatoes, chopped
• 3/4 tsp. salt
• 1/4 tsp. pepper
• 1-1/2 cups uncooked bow tie pasta
• 2 T. fresh basil, sliced
• 3 T. Parmesan cheese, grated
Cooking Directions
In a large nonstick skillet, brown ground beef and garlic over medium heat 8-10 minutes or until beef is no longer pink, breaking beef up into 3/4-inch crumbles. Pour off drippings. Stir in
tomatoes, salt and pepper. Cook over medium heat five minutes, stirring occasionally.
Meanwhile, cook pasta according to package directions. Toss beef mixture and basil with pasta. Sprinkle with cheese.

This is a well balanced meal with many essential vitamins and minerals. There are 29 cuts of lean beef and as luck would have it Lean Beef is one of them.... jam packed with Zinc, Iron and Protein.
